Day Fifteen. Trim Thursday


   Well, I've made it half way! Let's keep plugging along.

   Yesterday I made sugar free lemon cookies from a recipe off Pinterest. They turned out pretty well, though I didn't have the lemon zest or lemon oil. I substituted about two tablespoons of lemon juice to make up for the oil and zest. After they cooled, they were almost like soft lemon shortbread cookies. For the sweetener I used coconut crystals, which is  low glycemic (meaning it doesn't spike your blood sugar) and tastes an awful lot like sugar once it's baked in something.    One thing I will say, once you store the cookies, they loose their short bread like  consistency. They turned soft and fell apart easily when I tried one this morning.
